An Ode to Muffins

I don't know about y'all, but my kids, especially Bear, are unpredictable eaters. Something that they loved two days ago is now evil and feel like getting healthy and reasonable food into them on a regular basis is an ongoing struggle.

This is why I've developed a deep love and passion for muffins. You can put just about anything in them and the kids will still eat them. I just made a batch that has yogurt, banana, pumpkin, yellow squash, carrots, applesauce, pecans, oatmeal, and flax meal. They do have some sugar, but not a lot, and they pack a big nutritional punch. One recipe can make 30 mini muffins and they freeze really well.

Traveling for Christmas with little kids is so stressful for so many reasons. It's just impossible to keep a normal routine so eating and sleeping always gets disrupted and at some point you pay for it in exhausted meltdowns. BUT! Having nutritious, filling food on hand can really help since my kids apparently have bottomless pits in their stomachs.
